In its storied 20-year history, Madison Valley restaurant Rover's has welcomed the rich, the famous and the beautiful -- but not once the bovine. The acclaimed French bistro serves some of the most flavorful fare in Seattle (to the likes of Henry Kissinger, Oliver Stone, Hillary Clinton, Peter Gabriel, Julia Child and Geena Davis), but it has never put a steak on its menu -- until now.

In November, Rover's will offer a four-course beef tasting menu ($65) featuring hormone- and antibiotic-free Wagyu beef from Oregon. "Because the quality of Northwest beef is so high now, we thought it would be fun to feature it for the first time," chef-owner Thierry Rautureau said in a press release. "And being able to order filet at Rover's is a good excuse to bring the big wines out of the cellar."

Rautureau's tasting menus are always brilliantly composed -- his vegetarian and meat-inclusive lineups are equally luxurious -- and his beef presentation promises to be no less so. The first course features beef tenderloin tartare, oxtail terrine and brasaola; the second, braised short rib pot au feu with fall vegetables and sea salt; and the main course, a filet of beef with chard gratin and potato galette. Dessert offers a choice of apple and frangipane tart with caramel ice cream, or bittersweet chocolate soufflé.

Mon Dieu! Bring on the big wines. And le boeuf.
