B.R. Guest restaurants, a partnership of Starwood Capital Group and restaurateur Stephen Hanson (whose Wikipedia entry, curiously enough, re-directs to that of Freddie Mercury), recently announced that their first West Coast restaurant, Ocean, will open in Seattle in 2009. Ocean will be the star dining establishment of the sustainability-minded 1 Hotel & Residences, now under construction at Second and Pike.
Ocean -- not to be confused with Earth & Ocean, the downtown favorite that's possibly considering its legal options right now -- will serve seafood and seasonal ingredients drawn from sustainable local sources. B.R. Guest's properties include a dozen celebrated New York restaurants and some star establishments in Chicago and Las Vegas, so it's a safe bet that Ocean's kitchen will make the most of those local tastes. We'll only have to wait a year and a half to find out for sure.
